Saving the Planet

Neil’s Original Thought of the Day – Saving the Planet  

“Saving the Planet” is very commendable but living in a disgusting one is not pleasant.

Where once pots of geraniums etc adourned our nations doorsteps, there are now (in the area I live) green recycling boxes full of empty beer cans and wine bottles, swarming with wasps and flies.

Jerusalem Artichokes

Jerusalem artichokes are also known as sunroots or sunchokes. The jerusalem artichoke plant is a species of the sunflower native to eastern America which produces these edible tubers. They have a sweet, nutty flavour, reminiscent of water chestnuts.Jerusalem artichokes contain vitamin C, phosphorus and potassium and are a very good source of iron.

This is my favourite jerusalem artichoke dish: Roasted Jerusalem Artichokes

Ingredients
500g/1lb 1½oz Jerusalem artichokes, peeled
25g/1oz unsalted butter
100g/3½oz fresh breadcrumbs

Method
1. Boil the peeled Jerusalem artichokes in boiling salted water for 15 minutes until tender. Drain well.
2. Preheat the oven to 200C/390F/Gas 6.
3. Melt the butter in a frying pan and fry the breadcrumbs until crisp and lightly browned. Place the cooked artichokes in an oven dish and cover with the breadcrumbs.
4. Roast for 20 minutes, then serve straightaway. 
Preparation time: less than 30 mins
Cooking time: 30 mins to 1 hour

Isn’t there enough news this week?

Fern Brittain has made the press again!

The press show her on the beach in a bikini – both before and after her weight loss.

She looks absolutely fanastic now – but why do we have to keep reading about her stomach operation. As I have said before – the operation was her choice and her personal business.

Should she think about forming a group – Fern and her Gastric Band!!!

Sweet Potato

Sweet Potato is a traditional american vegetable. It is a good source of vitamin C – the yellow variety is also rich in vitamin A. It has a sweet chestnut-like flavour. Usually peeled after cooking, it can be cooked as an ordinary potato. It can also be added to soups, stews, breads and cakes, due to it’s sweet flavour

This is my favoutite sweet potato dish: Sweet Potato Chips

Ingredients

350g Sweet Potatoes
3 garlic clove, crushed
0.5 teaspoon sea salt
0.5 teaspoon black pepper
1 teaspoon ground cumin
0.5 teaspoon ground coriander

Method 

1. Set the oven to 200C/gas 6. Peel the potatoes and cut into ‘fat’ chips.
2. Place the garlic and spices into a bag and shake well together. Place the chips into the bag and toss well with the spices. Lay the chips in an even layer on a baking sheet.
3. Drizzle with oil and place in the oven. Bake for 30 minutes, until golden and then serve immediately.

Preparation time: 20 minutes

Cooking time: 30 minutes

When you see a large bird swoop from the sky, its talons stretched as it dives into the river, emerging with a shining salmon, remember – this doesn’t mean you can keep your cod next to the chicken in the fridge!
