Courgette

Make the most of this inexpensive, versatile vegetable.

Courgette Provencale

Ingredients

500 g courgettes
Salt & Pepper
Seasoned flour
3 tablespoons olive oil
250g onions
400g tinned chopped tomatoes
juice of 1 lemon
75g grated Parmesan cheese

Instructions

Cut the washed but unpeeled courgettes into 1 inch slices, sprinkle with salt and leave for 5 minutes. Wipe dry, and coat with seasoned flour.


Fry in 2 tablespoons of olive oil until golden, then drain. Fry the sliced onions in the rest of the olive oil.


Put layers of courgettes, onions and sliced tomatoes in a casserole, seasoning each layer and sprinkling with lemon juice: finish with a layer of tomatoes.


Bake in the oven at 190C (375F gas mark 5) for 20 minutes. Sprinkle with the cheese; brown under the grill.
